Grilled veggies with feta in a whole wheat pita
Description This is a great recipe to use left over veggies.

  • variety of grilled veggies like zucchini, yellow squash, asparagus, onions, etc - sweet potatoes are awesome on this sandwich
  • 1 oz feta cheese
  • couple leaves of raw baby spinach
  • whole wheat pita
Methods/steps
  1. assemble a variety of grilled veggies like zucchini, yellow squash, asparagus, onions, etc - sweet potatoes and place them in the pita
  2. top with feta cheese
  3. add raw baby spinach
  4. wrap in foil and grill until heated through
