  • 1 1/2 c frozen shelled edamame (10 oz.)
  • 1/4 c. olive oil
  • 1 tsp. ground cumin
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can black-eyed peas, drained and rinsed
  • 1/2 c chopped red onion
  • 2 c thinly sliced celery
  • 2 T fresh lime juice
  • 1/2 c chopped fresh cilantro
  • 1 tsp. finely chopped garlic
  • 1 1/2 t salt
  • 1/4 t black pepper
Methods/steps
  1. Thaw edamame in the refrigerator overnight or in a bowl of warm water. Mix remaining ingredients and let stand for ten minutes, to let the flavors blend. Chill and serve.
Additional Tips
Can be made a day in advance. Add onion to taste.
