Black Bean Enchiladas
These rich and hearty enchiladas are the perfect meal after a day of playing in the snow.

This Middle Eastern favorite is made of ground chickpeas.  Falafel tastes great combined with cucumber, yoghurt, red onions, tomatoes, and beans of any kind.  You can make your falafel from a mix or follow the recipe below for homemade patties.

Gumbo is a soup or stew that's full of spice and rich flavors, and it's the perfect warm-up meal for a cold winter's day.  With roots in Louisiana and the Southern Gulf Coast, gumbos are thick, hearty, and zesty. 

Sweet and salty - a very romantic treat.  Super fast and easy.

Serve warm or room temperature.  Make extra campfire baked potatoes the night before so you'll have potatoes already cooked for this recipe.  If you have access to a microwave you can shorten prep time by microwaving the potatos.

Simple and elegant.  Serve with a crisp Chenin Blanc.

Amazing flavors.  Simple preparation and quick cooking makes this a super speedy campsite (or back patio) favorite.  I use a cast iron grill pan over a fire or gas or charcoal grill.  A cast Iron skillet works just as well.  The imporatnat part is to preheat your skillet or grill and spray it with cooking oil spray just before putting the tuna on.

Awesome pizza-like panini - everyone will love.  Add a peppered bacon for a grown with BLT - the lettuce is replaced with basil.
